Leafy greens and herbs: arugula, spinach, beet greens, mustard greens, radish tops, kale, dandelion, nasturtiums, fennel fronds, nettles, lovage, microgreens.

Perhaps a microgreens or endive salad, with shitake mushrooms?

And an urban farm created atop the city’s Charonne reservoir grows and sells microgreens to locals, and teaches the green-minded how to grow them, too.

In my CSA experiences, I have received some amazing breads, cider, cheeses and microgreens, along with the fruits and vegetables.
