The Rock Cornish game hen enjoyed its first vogue in the 1950s, when “the Makowskys’ customers included the finest restaurants in New York, such as the popular 21 Club,” according to the Chronicle.

Two years later, it introduced Rock Cornish game hens, which became enormously popular and profitable.

Two of my mother’s specialties were her turkey matzo ball soup and her Rock Cornish hens a l’orange.

Sadly, I’ve not been able to locate any Rock Cornish at all.
